Vinification
Hand picked in the cool of the night to retain freshness and flavours. 40% was cold fermented in stainless steel tanks and lay on fermentation lees for 11 months before blended. No MLF took place.
Maturation details
60% Barrel fermented: 30% new Hungarian and French oak, 40% 2nd fill and 30% 3rd fill 300 litre French oak barrels and matured for a further 11 months before racking, blending (with tank fermented portion) and bottling. 40% of barrel fermentation was with natural yeast.
